HERBS 'N SPICES: HARVESTING HERBS

The best time to harvest herbs is midmorning after the dew has dried. Use a sharp pair of scissors or garden shears, and never strip the leaves off of the plant-instead cut stems and then strip the leaves to use. Don't let your plants become overgrown!

Trim them and dry the stems on a simple framed screen or hang them upside down (tied with rubber bands or string) in a dry space.

Clip them into a bottle and pour vinegar over them. I like the combination of dill, nasturtiums, and lemon balm or an assortment of herbs-sage, thyme, dill, nasturtiums, rosemary, oregano and basil. Let them sit in a windowsill for several weeks and they'll be ready to use in recipes. I use white vinegar and cider, but you can use wine vinegar too.

You can also freeze your herbs into small resealable bags, or puree them in a blender with water, then freeze as you would ice cubes. After they are froze, place the cubes in bags and use in soups, stews or beverages. You can also microwave herbs to dry them on paper plates with a paper towel placed over the leaves for short intervals, but I find this is slow going if you have a large harvest.

Herb sun tea is another wonderful treat during the summer. Place a handful of herbs such as lemon balm or mint and a few black tea bags into a gallon jar of cold water. Place it in the sun and let it brew for a few hours. Pour over ice and enjoy a refreshing glass of herb iced tea! Be sure to keep the leftover tea in the refrigerator.
